Pancakes
Ingredients:
- 1 cup all-purpose flour
- 1 cup warm milk or kefir
- 2 medium eggs
- ¼ cup starter dough
- 1 tablespoon white sugar
- ½ teaspoon salt
- 2 tablespoons of unsalted butter, melted
Steps:
- In a large bowl, mix the flour, sugar, and
salt together. - Mix the warm milk or kefir, melted butter, eggs, and starter dough, then pour into the dry ingredients. Stir until no lumps remain.
- Cover the bowl and keep it in a warm place to let the dough rise until doubled, 2-3 hours.
- Heat a lightly oiled griddle or pan over medium heat. Drop 1/4-cup batter onto the griddle or into the pan and cook until bubbles form and the edges are dry, about 2 to 3 minutes. Flip and cook until browned on the other side, about 1 to 2 minutes. Repeat with remaining batter.
- Serve warm with honey.
If using active dry yeast instead of starter dough, mix the yeast with warm milk and let stand for 5 minutes before mixing together with other ingredients. Use an extra ¼ cup of flour.

White sugar is neutral and sweet, acts on the Spleen and Lungs, and fortifies body fluid. It balances the Middle Warmer—that is, the stomach and spleen area, and reduces overheating and inflammation. It relieves weakness in the middle part of the torso, pain and discomfort in the stomach area, dryness in the mouth and Lungs, and dry cough.
Salt is cold and salty and acts on the Kidneys, Stomach, Small and Large Intestines. It prevents dehydration, dissolves hard lumps, relieves congestion and constipation.
Butter is warm and sweet and provides qi. It assists in treating various ulcerative and skin conditions, such as fungal and mite infections.
Raw honey is neutral, while heated or cooked honey is warm. Honey is sweet and strengthens the Spleen, Stomach, Lungs, and Large Intestine. It nourishes yin, lubricates dryness, tonifies weakness, harmonizes the whole body, and detoxifies body waste.
